De wortelstok van beide Zingiberaceae bevat curcumine (= diferuloylmethaan, E100), bijna onoplosbaar in water. Het wordt best opgenomen met peper of vetten zoals het geval is in curry. De combinatie van curcumine met piperidine verhoogt de beschikbaarheid van curcumine 20-voudig, met polysorbaat 9-voudig, met polysorbaat en olie 20-voudig. Fytosomen complexeren curcumine met fosfatidylcholine zodat 450 mg van dit complex zo doeltreffend wordt als 4 g curcumine bij mensen. Onder de vorm van nanodeeltjesemulsies wordt de absorptie van 10[1] tot 27[2] -voudig verhoogd bij de mens. Curcumine wordt nadien snel gecataboliseerd.
